Fazer dieta engorda

RIO – Especialista em neurociência do comportamento alimentar, a francesa diz que dieta engorda. Depois de nove anos nos EUA, ela veio para o Brasil, fez doutorado na USP, deu palestra no TED, e seus artigos sobre alimentação caíram no gosto popular. Atualmente, prepara um livro com receitas fáceis e dá três dicas básicas: não faça dieta, coma alimentos verdadeiros e cozinhe.

Como a dieta afeta o cérebro?

Somos onívoros. Precisamos comer de tudo e, se começarmos a diminuir o que estamos comendo, seja fazendo dieta, seja tirando um grupo alimentar da alimentação, como o dos carboidratos, não estaremos nutrindo nosso corpo. Aí o cérebro entra em estado de alerta, acha que está em perigo, adapta-se ao estresse e aumenta a fome para você comer mais. Como você não está comendo, ele baixa seu metabolismo. E aí impõe uma situação em que é muito difícil continuar a dieta. De 90% a 95% das pessoas que fazem dieta restritiva voltam ao peso inicial ou ganham mais peso. O cérebro não deixa o corpo perder muito peso rápido. É uma adaptação.

Dieta faz engordar?

Um estudo com gêmeos idênticos mostrou que aquele que havia feito dieta era mais gordo que o outro. E, quanto mais deita fazia, mais peso ganhava. O pesquisador concluiu que fazer dieta engorda, é ciência. Tudo o que eu falo é baseado em estudos científicos. Outro estudo mostrou que quem faz dieta restritiva aumenta o risco de ter compulsão. O cérebro fica tão estressado que aumenta os gritos de fome, e a pessoa pode desenvolver compulsão.

A receita de fechar a boca e fazer atividade física não funciona?

Essas duas dicas colocam a pessoa num estado de ganho de peso no futuro. Quando você fala para alguém fechar a boca e aumentar a atividade física, está aconselhando que se façam duas coisas que aumentam a fome. No começo ela vai emagrecer, mas depois tem um mecanismo de adaptação que a coloca em risco de aumento de peso. Emagrecer não é tão simples assim.

Como emagrecer?

É importante respeitar o seu corpo e o seu cérebro e não ficar obcecado com a balança. Também não achar que seu corpo pode ser modelado do jeito que você quer. Em vez de tentar controlar o corpo, é melhor dançar com ele. Mas infelizmente escutamos que podemos fazer o que quisermos com o nosso corpo, e isso não é verdade, ele não deixa.

Contar calorias faz mal?

Não é que faça mal, mas eu não recomendo, porque, quando você calcula calorias, fica obcecado por controlar sua alimentação, então esquece de escutar seu corpo e muda a relação com a sua alimentação.

O que podemos considerar uma dieta restritiva?

É uma dieta que tira um grupo alimentar, uma dieta sem carboidrato ou sem gordura, por exemplo. Ou uma dieta que vai diminuir a quantidade do que você come. Fazer restrição, cortar calorias, diminuir a quantidade, na verdade, deixam a pessoa com fome. Claro que uma dieta saudável, se não é restritiva, não faz o mesmo efeito. Mas dieta saudável que restringe não é saudável. Uma dieta que deixa você com fome não é saudável.

Dietas sem glúten estão na moda. Elas fazem mal?

O problema é que tiram o glúten sem necessidade. É muito difícil fazer dieta sem glúten porque ele está em todo lugar na base da nossa alimentação. No pão, na pizza. Aí a pessoa fica estressada e muda a relação com a comida. Esse é o problema.

E a gordura?

A demonização da gordura foi provavelmente o grande erro da nutrição, porque a gordura é importante no nosso equilíbrio. Ela não faz engordar. As mulheres precisam da gordura para regular seus hormônios. Nosso cérebro é feito de gordura. Toda célula tem colesterol, então nosso corpo precisa de gordura para seu funcionamento. Uma dieta muito baixa em gordura pode aumentar o risco de depressão e também diminui a libido da mulher. Para as crianças, a gordura é ainda mais importante, pois auxilia no desenvolvimento do cérebro.

‘Fast-food’ também está liberado?

Uma vez ou outra não vai alterar o peso nem a qualidade da sua alimentação. Claro que eu não incentivo comer sempre no fast-food, mas, para um adolescente que precisa perder peso, eu não tiro o fast-food, porque faz parte da vida dele. Se eu cortar, ele ficará muito triste. Claro que se 80% do tempo você tem que comer de maneira mais caseira, com alimentos mais verdadeiros, o restante não tem problema. Nunca vou falar que fast-food é veneno. É alimento, mas não vai ajudar a desenvolver uma saúde perfeita se você comer só isso.

O que você considera terrorismo nutricional?

A nutrição de hoje está criando muitas regras rígidas que acabam estressando a pessoa. E isso é terrorismo. De uma hora para outra o glúten não faz bem, todo mundo se estressa com o glúten. Depois é a lactose, a carne vermelha, e por aí vai. Acabamos não sabendo mais o que comer, porque tudo isso é a base da nossa alimentação. Precisamos relaxar com a alimentação, pois, do contrário, podemos desenvolver distúrbios alimentares. E se isso nos afeta, pode afetar ainda mais nossos filhos. É difícil para uma criança saber o que comer, tem tanta regra que fica quase impossível comer bem. Comer bem é comer de tudo, sem culpa e escutando o seu corpo.

E como acabar com a culpa?

A primeira coisa é parar de fazer dieta. Tenho três dicas básicas: não faça dieta; coma alimentos mais verdadeiros, frescos, caseiros; e volte a cozinhar. Estou escrevendo um livro sobre isso, com receitas simples e nutritivas para o dia a dia. Está todo mundo correndo, mas, quanto mais verdadeiro e caseiro é o alimento, mas você melhora seu peso e sua saúde.
